It's my own fault for falling for the advertising and not doing the research I normally do for a purchase.The reason for my one star review is that these knives are mass produced, and the advertising is false. Search "VG10 Core Damascus Pattern" or a similar title on aliexpress or alibaba, and you will see it is only a re-branded one. I also say this because I ordered one from aliexpress and I could not tell a difference besides the Damascus pattern.I returned these knives and just ordered the other named one from ali express.
I really wanted to like this knife. I own and use many knives both at home and at my job as a professional chef in a busy kitchen. I have done my homework on blade steels and handle materials. The advertising of this knife (9.5 inch shotgun series gyuto) seemed too good to be true, and indeed it was.Overall this knife feels unbalanced. It is a little bit heavy, which is ok if properly balanced, but this isn't. It's heavy at the bolster, and the tang angles down slightly from the spine, which also takes away from knuckle clearance. It just feels clumsy in the hand. The profile of the edge is weird and curves back up towards the handle at the heel of the blade.Sharpness is very poor. The bevel is uneven and is not ground in "painstaking 3 step hanbazuke method" as advertised. It's ground most likely on a belt grinder, and not very well. I sharpen my own knives and I'm pretty good at it, this aspect of this knife falls way short of the advertising, which is false. The blade is advertised to be made of AUS-10"V". There is no "V" designation for AUS-10, I believe this is a marketing gimmick, to make it sound more special. AUS-10 is not "super steel" either. It is very good and one of my favorite work knives is AUS-10, but it's not quite as good as VG-10, which isn't "super steel" either. The "damascus cladding" is pretty washed out looking, and I suspect it is not The handle is advertised as "military grade" G-10. I don't know what that even means. It's like saying "military grade" plastic, or fiberglass, or wood. I guess it just sounds cool. In any case, I have several knives with G-10 handle scales in both textured and smooth finishes. I was excited to have a kitchen knife in G-10, but this was not like my other G-10 handles. It was glossy, which G-10 usually is not, and it just didn't feel right. Also, the mosaic pin is not real, it does not match on both sides.The packaging was nothing less than an outlandish waste of money. The box had a hinged lid with magnetic closure. The knife in it's molded plastic "saya" was nestled in high density foam. There was a polishing cloth like you get with nice sunglasses, a lapel pin (really?!) and an instruction manual printed on heavy duty waterproof, possibly fireproof paper. An epic waste.Nowhere on this knife is marked the country of manufacture, and I had to dig a little to figure out that dalstrong is a Canadian company. I still don't know where their knives are made, but it is for certain that these are NOT Japanese knives.I am a simple home cook who is appreciating an upgrade in kitchen knives. I have the German steel Gladiator series of knives from Dalstrong which serve as my kitchen workhorses. This Shogun series 8" chef's knife marks my fourth Shogun piece, and I am very happy with all of them. This Shogun chef's knife is beautiful (although the Damascus pattern is most prominent on my 5' Santoku in the Shogun series), feels great in the hand, I appreciate the changeup of having the full length of the blade available (unlike with the big bolster on the Gladiator series), and the knife cuts like a razor. I knew I was buying a Japanese steel knife made in China, and I was skeptical when I purchased my first Shogun pieces. I avoid "made in China" whenever possible (increasingly impossible). It could very well be that there are other comparable knives at comparable prices. But, personally, I really like the Dalstrong knives, feel like I got good value for my money, and enjoy the peace of mind knowing that I have great customer service standing beside me. I have no idea how these knives hold up in a working kitchen, but I can't imagine I will ever need anything more for my home kitchen. (Besides, even if I worked in a restaurant kitchen, I wouldn't be taking my Shogun series knives to work...save the best stuff for home!) From my limited vantage point, it is difficult to imagine quality and craftsmanship any better than the Shogun series, at any price. I could pay more for more exotic materials (especially handles), for a particular brand name, or for a country of origin, but I don't think I would get more knife for my money.

The Dalstrong Origin Story
Dalstrong was established in 2014 by our CEO David Dallaire, who is the mastermind behind the brand and designs. Based in Toronto, Canada, Dave takes his inspiration for our knives from pretty much anywhere you can imagine — landscapes, infrastructure, history, movies, art, and more. In 2015, Dalstrong Inc was incorporated in Canada, followed by the United States in 2019. Since then, Dalstrong has aggressively expanded our culinary business around the globe. These highly trained craftsmen spend anywhere from 30-60 days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles using the 3-step Honbazuke honing method.
This traditional Japanese process is married with high-tech processes such as Cryo-tempering which improves the steel’s crystalline structure (making them stronger). Every single one of our knives is painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years. Today, Yangjian holds the title of National Capital of Knives and Scissors, exporting to more than 100 countries and accounting for 60% of all knife product exports in China.
Before we partner with any global organization, we seriously consider their stance on worker’s rights and eco-sustainability. It’s important to us that our partners align with our values. Our main manufacturing partners are certified ISO humans rights compliant, with 4 weeks of paid vacation for their employees per year and fair wages.
At our manufacturing plants, the artisans and lead foremen are on a personal mission to prove to the world that Chinese knife quality is world-class. As such, our factory proudly stands head and shoulders above all others in YangJiang.
Our Global Reach
We want the whole world to experience Dalstrong. Our innovative designs draw on inspiration from all over the planet, including art, architecture, historic societies, cultural traditions, and more. Fueled by the motivation of our international team, we won’t rest until we have Dalstrong knives in every corner of the globe. So far, we’ve shipped our knives to 50 different countries on every continent but Antartica. Supporting Our Community
In addition to working directly with chefs, Dalstrong has partnered with various institutions to positively impact our communities and the culinary world at large.
By the end of 2021, we’ll have donated 1200 professional chef knives to the Careers through Culinary Arts Program (C-CAP). A workforce development nonprofit, C-CAP provides culinary, job, and life skills to middle and high school kids across the United States. A thirty-one-year-old organization striving to help further food and social justice, equity, and inclusion, they’ve served 350,000 students and distributed 62 million in scholarships to date.
Dalstrong is also proud to have joined both the Wounded Warrior Project and Wounded Warriors Canada. Both projects support veterans or first responders and their families, offering various support programs for community-building, mental wellness, physical wellness, career counseling, and independence.
Dalstrong believes that everyone has a responsibility to give back. That’s why we look to partner with chefs, pitmasters, culinary schools, grillmasters — anyone who wants to make a positive impact in their communities and the culinary world at large.
One of those incredible chefs is no other than Dominque Crenn, the first female chef to receive three Michelin stars in the US. Last year, when many restaurants were closing across the country due to the pandemic, we partnered with her foundation to support the homeless community in San Francisco. Through a donation of more than 200 culinary tools — including knives, aprons, and accessories — we’ve helped her foundation provide 2,000 plates a week to those in need.
